Ingredients:

1 butternut squash, peeled and diced

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 teaspoon grated ginger

1 teaspoon ground cumin

1/2 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1 14-ounce can coconut milk

1 tablespoon tomato paste

1 tablespoon honey

1 tablespoon curry powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup chopped fresh cilantro

 

Directions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, toss butternut squash with olive oil. Spread on a baking sheet and roast for 25 minutes, or until tender.

3. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, garlic, ginger, cumin, coriander, cinnamon, and cloves. Cook for 5 minutes, or until onions are softened.
