Perfect Chipotle-Lime Chilaquiles at home

Chipotle-lime chilaquiles are a flavorful and easy-to-make Mexican dish that can be enjoyed for breakfast, lunch, or dinner. Made with crispy tortillas, flavorful sauce, and plenty of cheese, this dish is sure to please everyone at the table.


– 12 corn tortillas

– 1 tablespoon vegetable oil

– 1/2 cup salsa verde

– 1/2 cup sour cream

– 1/2 cup chipotle salsa

– 1 cup shredded monterey jack cheese

– 1/4 cup chopped fresh cilantro

– 1 lime, cut into wedges



1. Preheat oven to 350 degrees F (175 degrees C).

2. Cut tortillas into 1-inch strips. Heat oil in a large skillet over medium heat. Add tortilla strips and fry until crisp, about 5 minutes.

3. In a medium bowl, mix together salsa verde, sour cream, and chipotle salsa.

4. Spread a layer of tortilla strips in the bottom of a 9×13 inch baking dish. Top with a layer of sauce, then a layer of cheese. Repeat layers of tortilla strips, sauce, and cheese.

5. Bake dish for 20 minutes, or until cheese is melted and bubbly. Sprinkle with cilantro and serve with lime wedges.
