Italian Meatball Soup

This delicious Italian meatball soup recipe is the perfect way to warm up on a cold winter day! It’s packed with flavor and easy to make, too.

 

Ingredients:

– 1 pound ground beef
– 1/2 cup bread crumbs
– 1/4 cup grated Parmesan cheese
– 2 tablespoons parsley
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 cup milk
– 1 egg
– 2 tablespoons olive oil
– 1 onion, chopped
– 3 cloves garlic, minced
– 6 cups beef broth
– 1 (14.5 ounce) can diced tomatoes
– 1/2 cup uncooked pasta

 

Directions:

1. In a large bowl, mix together ground beef, bread crumbs, Parmesan cheese, parsley, salt, and black pepper. Add milk and egg, and mix well. Shape into 1 inch balls.
