1.1 liter vegetable stock
225 grams rice*
1 onion, finely chopped
50 grams Parmesan cheese, grated
2 lemons, zested and juiced
1 tablespoon olive oil
Salt and black pepper
* The key to a perfect risotto is in the rice. You’ll want to use a short-grain rice, like Arborio, Carnaroli, or Vialone Nano. These types of rice have more starch, which is released as the rice is cooked and stir-fried, creating that lovely, creamy texture.
1. Preheat the oven to 190 degrees C.
2. In a saucepan, heat the vegetable stock over a medium heat.
3. In a separate saucepan, heat the olive oil over a medium heat and fry the onion until softened.
4. Add the rice and fry for a minute until coated in the oil.
5. Add the hot stock to the rice, a ladleful at a time, stirring continuously until all the stock has been absorbed.
6. Stir in the Parmesan cheese, lemon zest and juice.
7. Season with salt and black pepper.
8. Transfer the risotto to an oven-proof dish and bake for 10-15 minutes until the risotto is cooked through and creamy.
